Spanish Omelet can be extremely easy! Fry some potato, onion and veggies (if you wish) in olive oil for about 10 to 15 minutes. Then add 8 to 10 eggs (already whisked up) to the pan and cook on medium/low for another 15 to 20 minutes. On the stove-top or in the oven (flipping over once, after it becomes solid). If it burns it means you need more oil and a bit lower heat...

I made a batch of omelets and used it throughout the week for several meals. It's a healthy alternative to quiche. This one includes some side dishes: leafy greens with celery, nuts, seeds and garlic all cooked in coconut oil. Then just cut up some apple on the side and voila, the most beautiful meal!
